1Ingredient cost. Unit price × amount used, divided by (1 − waste). Waste (peeling, trimming, cooking loss) is bought but never reaches the plate, so it raises what you need to use. Batch total: 4.25 ₾.
2Cost per portion. 4.25 ₾ ÷ 1 = 4.25 ₾.
3Food cost. Cost is divided by the price without VAT, because VAT goes to the state and is not your revenue. 4.25 ₾ ÷ 18.64 ₾ = 22.8%.
4Recommended price. For a 30% food cost, the price without VAT must be 4.25 ₾ ÷ 30% = 14.18 ₾. With 18% VAT that is 16.73 ₾. Rounded up to 0.50 GEL: 17 ₾.
