What makes up the losses, % of purchases

If you do not know your percentages, use rough ones. Real figures come from reconciling stock counts.

How it is calculated

  1. 1Losses by cause. Purchases × percent: spoilage 15,000 ₾ × 3% = 450 ₾; over-portioning 15,000 ₾ × 2% = 300 ₾; errors and unrecorded 15,000 ₾ × 1% = 150 ₾.
  2. 2Total losses. 450 ₾ + 300 ₾ + 150 ₾ = 900 ₾ a month, or 6.0% of purchases. Over a year ×12 = 10,800 ₾.
  3. 3What you can recover. 900 ₾ × 40% = 360 ₾ a month, or 4,320 ₾ a year. It is an estimate from your inputs: the real share depends on the kitchen.
